Monday – Grilled salmon with corn orzo salad.
Tuesday – Eggplant parm. Meal prep tip-dip the eggplant in egg and bread cakes, bake once. Then layer in pan with sauce and cheese and bake again the night you’re eating it.
Wednesday – Healthy Mexican chicken quinoa skillet.
Thursday – Easy Skillet Italian Chicken and Potatoes
Friday– Lemon herb Mediterranean quinoa salad
