Baked Stuffed Chicken Breasts with Cheese, Spinach, and Sun-dried Tomatoes

Healthy stuffed chicken breasts with feta cheese, mozzarella cheese, spinach, and sun-dried tomatoes tastes like a gourmet meal you would order in a restaurant. But you’ll enjoy this easy meal in the comfort of your own home!

Chicken breast is the most versatile protein. Often when I cook them at home, I add it to salads or wraps for extra protein. Seasoned minimally with just salt and pepper, it’s pretty boring. But this recipe is anything but boring. The chicken breasts have a perfect sear and are stuffed to the brim.

Marinated in a sun-dried tomato pesto and stuffed with feta and mozzarella cheese oozing out, this chicken dish is a must have! The spinach and sun-dried tomatoes mix well with the melting cheeses. Trust me, you’ll want to make extra to eat the rest of the week.

Ingredients
  • 1 tbsp sun-dried tomato pesto
  • 2 large chicken breasts
  • ½ cup fresh spinach, chopped
  • ½ cup sun-dried tomatoes
  • ½ cup feta cheese
  • ½ cup shredded mozzarella
Instructions
  1. Preheat oven to 375 degrees.
  2. Rub sun-dried tomato pesto on both sides of chicken breasts. Using a sharp knife, cut through the long side of the chicken breasts about ¾ of the way through.
  3. In a small bowl add the spinach, sun-dried tomatoes, feta cheese, and mozzarella cheese. Stir together.
  4. Add the cheese mixture to the chicken breasts, stuffing as much as you can. If it all doesn't fit that's okay.
  5. Carefully transfer to a baking dish (spray with cooking spray first). Bake for 20-30 minutes or until chicken reaches an internal temperature of 165 degrees.

Pasta bake with chicken sausage, mozzerella, spinach, and cherry tomatoes

I said my New Year’s Resolution was to post more, so far that has been a big fail!  I’m about 6 weeks away from the baby’s due date, so instead of a weekly meal planning post, I’m offering a single meal dish of my dinner tonight.  

As I sat down to eat, I had this sudden urge to take a picture of this dish and share it with my blog!  This pasta dish is on the lighter side; it’s creamy, but has no heavy cream in it. Instead the creamy consistency comes from greek yogurt!  The inspiration for this recipe can be found here.

  

Pasta bake with chicken sausage, mozzerlla, spinach, and cherry tomatoes

Ingredients

  • 1 box veggie or whole wheat pasta
  • 1 lb spicy or mild Italian chicken sausage
  • 1 bag of spinach
  • 2 garlic cloves, minced
  • 1 cup grape tomatoes, halved
  • 1 cup tomato sauce
  • 3/4 cup plain greek yogurt
  • 1/4 cup milk
  • 1 and 1/4 cups shredded mozzarella cheese
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp red pepper flakes

Steps

  1. Preheat oven to 375 degrees
  2. Cook pasta according to the package directions. Before draining, place spinach at the bottom of the strainer and drain pasta over spinach, allowing it to wilt.
  3. Cook chicken sausage in 1 tbsp butter or olive oil over medium heat for 12-14 minutes. Add garlic and cook for another 30 seconds. Remove from heat and place cooked sausage onto cutting board. Slice into bite size pieces.
  4. Add garlic pieces to a large bowl, add the cooked pasta, sausage, spinach, and tomatoes. Then add tomato sauce, yogurt, milk, 1 cup of cheese, and spices. Mix very well. Pour into casserole dish. Top with remaining cheese. Cover with foil.
  5. Cook for 30 minutes covered. Remove foil, and cook for another 10 minutes
.

CSA week 2

This week I received- sage, bok choy, spinach, lettuce, asparagus, and snap peas.  Trying to come up with meal ideas last minute is petty hard! But I look ahead over the weekend to see what’s on sale at the food stores, then wait to see what comes in the CSA and plan my meals Monday night instead of Sunday.  Getting more sage this week was a challenge to come up with more recipes; I loved the chicken dish form Tuesday night, but ended up freezing a lot of it.  To see my weekly meal plan ideas with these ingredients, click here for the week of June 14th. 

  


Sage

  • Dinner- Chicken breast stuffed with sage, gorgonzola, and dried cranberries 
  • Dinner- Sage/cheddar biscuits

Bok Choy

  • Dinner – Steak and bok choy stir fry

Spinach

  • Breakfast- Shake with spinach, mango, blueberries, banana, ground flaxseed, and almond milk
  • Breakfast- Eggs and spinach omelette 
  • Lunch- Turkey sandwiches with spinach and tomato 
  • Lunch- Spinach salad with blueberries and sliced almonds

Lettuce

  • Side of lettuce with pulled pork dinner and pizza dinner

Asparagus

  • Side for Friday night dinner party- I made the summer pasta salad again from last week with asparagus, red pepper, and mozzarella 

Snap peas

  • Dinner- Grilled snap peas with chicken for Tuesday night dinner
