Six easy and healthy sheet pan meals the whole family will love. Roast chicken, pork, steak, salmon, vegetables, and potatoes all at once!

Preparing dinner for a family is no easy task, forget worrying about making something healthy for them. What if you could make an easy and healthy dinner that cooks all at the same time? Oh, and clean up is also a breeze. Would you believe me?  You better because that’s what I’m sharing with you today. Five easy and healthy sheet pan meals, plus a sheet pan breakfast.

Until recently, I had no idea there was a difference between a sheet pan and what is more commonly used, a jelly pan. Both are similar in size and shape, but a jelly pan is thinner and can’t withstand the high temperatures that sheet pans can; they warp during cooking. Have you ever heard a loud bang when your pan is in the oven? If you answered yes, you have a jelly pan, not a sheet pan.

A sheet pan is made of aluminum and can withstand high temperatures. It can be used for anything from baking cookies to roasting vegetables. I purchased this inexpensive sheet pan from Amazon and so far I’m loving everything about it.  Another must have when cooking with sheet pans is a silicone baking mat to prevent food from sticking. This is the exact mat I use; it prevents the use of butter, oil, or spray and replaces parchment paper.

Why sheet pan dinners are the greatest ever: 

  1. All your food cooks together
  2. Keeps clean up to a minimum
  3. No scrubbing pots and pans
  4. Most ingredients can be prepped before hand

Sheet Pan Balsamic Vinegar Chicken

One pan dinner ready on the table in 30 minutes. Sheet pan chicken with balsamic vinegar, roasted Brussel sprouts and prosciutto sounds fancy, but it is very easy to make!

I was never a fan of Brussel sprouts! Even the name does not appealing, and it was one of those veggies your parents would force you to eat as a child. I think this is the main reason why people hate them as an adult. A few years ago I decided to give Brussel sprouts another go. If you’re not a fan, have you tried them with bacon or prosciutto? And if you are a fan already, you need to try this recipe.

Sheet Pan Balsamic Vinegar Chicken

Serves: 3-4
Ingredients
  • 3-4 chicken breasts, pounded thin or 3-4 chicken cutlets
  • 12 oz Brussel sprouts, washed and cut in half
  • ¼ cup red onion
  • 3-4 slices of prosciutto, rolled and sliced into tiny pieces
  • Olive oil
  • Salt and pepper
  • 1 teaspoon Italian seasoning.
  • 3 tablespoons balsamic vinegar
Instructions
  1. Preheat oven to 400 degrees. Spray sheet pan with non stick spray or use baking mat.
  2. If using chicken breast, pound until thin, making sure it is even throughout.
  3. Place chicken on the sheet pan and season both sides with salt, pepper, and Italian seasoning. Arrange Brussel sprouts, red onion and prosciutto on sheet pan. Drizzle everything with olive oil and add more salt and pepper to Brussel sprout mixture.
  4. Bake for 15 minutes or until chicken reaches an internal tempature of 160 F. Then switch to broil for four minutes; be careful not to burn the Brussel sprouts.
  5. Remove from oven and drizzle with balsamic vinegar.

A simple breakfast, perfect to make when you don’t want to spend time in the kitchen but want a really good meal!

I love breakfast; it’s the most important meal of the day. I can never skip it and wait until lunch.  I would feel out of sync, like I missed something. This sheet pan breakfast is perfect if you’re hosting a brunch or holiday and don’t want to spend a lot of time in the kitchen.

All ingredients cook on the same pan, so clean up is a breeze, too. The chicken sausage I used was by Al Fresco because it comes fully cooked. If you buy uncooked sausage, the cooking time will vary.

Serves: 2
Ingredients
  • 5-6 red potatoes, washed and cubed
  • 2 tablespoons olive oil
  • ¼ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 spicy jalapeño chicken sausages sliced (I used Al Fresco)
  • 4 eggs
Instructions
  1. Preheat oven to 400 degrees F. Line sheet pan with baking mat.
  2. Place potatoes in a single layer on the baking sheet. Add olive oil, Parmesan cheese, Italian seasoning, salt, and pepper. Toss to combine.
  3. Bake in oven for 25-30 minutes or until golden brown.
  4. Remove from oven, create 4 wells, add eggs gently, keeping yolk intact.
  5. Add sliced chicken sausage to pan.
  6. Return to oven and bake for an additional 10 minutes.

Healthy sheet pan salmon and roasted vegetables. Full of flavor, you’ll love this easy weeknight meal!

Of all the sheet pan dinners, this one is definitely the quickest and the veggies are easy to prep in advance.  I don’t recommend cooking fish in advance; buy salmon the day you are going to cook it. You can substitute different veggies like Brussel sprouts or carrots for the broccoli.

If you want, you can serve this with rice, but I didn’t and we were all plenty full.

Ingredients
  • 1 cup teriyaki sauce
  • 1 lb salmon
  • 2 cups broccoli, washed and chopped
  • 1 red bell pepper, washed and sliced
  • 1 tbsp olive oil
Instructions
  1. Marinate salmon for 1 hour in teriyaki sauce in fridge. Reserve marinade.
  2. Preheat stove for 350 degrees.
  3. Place baking mat on sheet pan and place salmon in the center. Arrange broccoli and red bell pepper slices around salmon.
  4. Drizzle marinade and olive oil on top of salmon and veggies.
  5. Bake for 15 minutes or until salmon is flaky.

One pan pork, potatoes, and butternut squash

A simple dinner to meal prep. The fresh sage brings this one pan dish together. Enjoy your easy clean-up! 

I’m really enjoying one pan dinners or sheet pan dinners, whatever you want to call them. As long as it leads to less dishes and more time relaxing on the couch!

This is another dinner using ingredients from Trader Joe’s. For my other TJ dinners click here. For this recipe, I used TJ’s pear champagne vinaigrette, fresh sage, and 1 bag of potato medley which included red, yellow, and purple potatoes.

Serves: 2-3
Ingredients
  • 2-3 pork cutlets or pork chops
  • 2 tablespoons pear champagne vinaigrette
  • 2 tablespoons olive oil
  • 1 bag Trader Joe's potato medley, cubed
  • 4 tablespoons fresh sage, minced
  • ½ red onion, cut into large chunks
  • 2 cups butternut squash, washed and cubed. I used precut butternut squash to decrease my prep time.
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 400 degrees.
  2. If using pork chops, pound them thin. Place pork chops in a shallow bowl, coat both sides with salt/pepper and the pear champagne vinaigrette. Cover and refrigerate for 30 minutes.
  3. Meanwhile combine the potatoes, 2 tablespoons sage, red onion, and butternut squash in a large bowl. Toss with olive oil.
  4. Spread mixture onto a sheet pan and cook for 30 minutes or until vegetables are soft.
  5. Remove pan from oven. Spread potatoes on sheet to make room for the pork chops. Sprinkle the remaining 2 tablespoons of sage on top. Put the sheet pan back in the oven and roast for 5-15 minutes or until pork reaches an internal tempature of 145 degrees (time will depend how thick your pork is).
  6. Turn broil on high and broil for three minutes.
  7. Remove from oven.

Sheet Pan Chicken Nachos

Sheet pan chicken nachos are incredibly cheesy and have the perfect amount of zing. They make the perfect appetizer or meal! 

I take nachos very seriously. There is nothing more disappointing than eating sub-par nachos or having cheese only on the top layer of chips!! That’s why the most importance step is the layering of ingredients!  But you can’t forgot about key ingredients that bring the dish together. Sour cream, salsa, olives, jalapeño peppers, beans, and guacamole are just a few ways to personalize your nachos to your liking.  If it was up to me, I would use an entire can of olives!

For this recipe I seasoned the chicken with a fajita seasoning. I used this one from Penzeys Spices. Fajita seasoning is basically a blend of a bunch of spices like cayenne pepper, garlic, celery seed, cumin, basil, etc.

Ingredients
  • Tortilla chips
  • 1.5 cups rotisserie chicken, either shredded or cut into bite size pieces
  • 1 tablespoon fajita seasoning
  • ¼ cup onion, chopped
  • ¼ cup black beans
  • ½ cup queso
  • 2 cups shredded Mexican cheese
  • 3 tablespoons cilantro, chopped
Instructions
  1. Preheat oven to 350 F.
  2. Layer chips in a single layer on a large sheet pan or baking pan sprayed with nonstick spray or use a silicone baking mat.
  3. In large bowl, add the chicken and season with fajita seasoning. Arrange chicken on top of the chips. Add the onion and black beans. Drizzle the queso on top, add the Mexican cheese, then top with the cilantro.
  4. Bake for 6-7 minutes, rotate pan then bake for another 6-7 minutes or until the cheese is melted fully.
  5. Top with your favorites - sour cream, guacamole, salsa, etc
