Thai Pork with Peanut Sauce

Ingredients
  • 1 lb pork tenderloin, cubed into 1 inch pieces
  • ½ cup salsa
  • ¼ cup peanut butter
  • 3 tbsp lime juice
  • 3 tbsp soy sauce
  • 3 tbsp water
  • 2 tbsp ginger
  • ¼ cup sugar
  • ½ tsp roasted garlic
  • ¼ cup peanuts (optional)
  • 1 cup rice, uncooked
Instructions
  1. Place all ingredients except peanuts and rice into crockpot. Cook on low 4-6 hours
  2. Cook rice according to package directions 20 minutes before ready to serve
  3. Evenly distribute rice into bowls and top with pork and sauce
  4. Top with peanuts
