Easy ramen noodle soup

This easy pork ramen soup is made with left over pulled pork and will quickly become one of your family’s new favorites.

Do you ever get a craving for a certain kind of food or a particular dish? That’s how I was feeling recently with ramen noodle soup. I went out for my first Pho experience and loved it! Pho is a Vietnamese soup consisting of broth, rice noodles, a few herbs, and meat. The portion was so large that I took half of it home, cooked my own noodles, and added it to the broth to enjoy another day.

Ramen noodle soup has become very popular. The springy noodle and texture is a perfect match for the hearty broth. There are a few different types of noodles you can use – fresh, dried, or instant. And the options for toppings are endless. From simple vegetables and seasonings to meat and sauces that can be prepped in advance. And the most important ingredient of them all…the egg. Soft boil or poached are the two most common choices. For this recipe, I decided to use a soft boiled egg. Fun fact: it was my first time making a soft boiled egg.

Serves: 4
Ingredients
  • 4 eggs
  • 1 tbsp sesame seed oil
  • ¼ cup yellow onion, diced
  • 4 gloves garlic, minced
  • 2 inch piece of fresh ginger, pulled and chopped
  • Two bunches of baby bok choy, washed and sliced length-wise
  • 6 cups chicken stock
  • 2 tbsp soy sauce
  • 3 tbsp miso paste
  • 1 cup pulled pork
  • 14 oz stir fry noodles or ramen
  • Green onion
  • Fresh cilantro
Instructions
  1. To soft boil egg, fill pot with water and heat over high heat. Once boiling, use a slotted spoon and place eggs into water. Cover, turn to a simmer, and cook 5-6 minutes. Immediately place in an ice bath to stop the cooking process. Leave in ice bath for 10 minutes, then remove and set aside.
  2. While the egg is cooking, heat sesame seed oil over medium heat in a Dutch oven. Add the onion and saute 2-3 minutes. Then add the garlic and ginger and cook for another minute.
  3. Add the bok choy, stir together and cook for 1 minute. Then add 1 cup of broth and simmer for 5 minutes.
  4. Add the rest of the broth, soy sauce, miso paste, and pork. Cover and simmer until the pork is heated through, about 10 minutes.
  5. While the soup mixture is simmering, cook the ramen noodles according to package directions.
  6. To serve, place noodles into a bowl and top with soup mixture. Peel the eggs and carefully slice in half lengthwise. Add 1 egg to each bowl.
  7. Top with green onions and cilantro.

Happy last week of January/first week of February. This week’s theme is all about the Super Bowl! The New England Patriots are back in the big game, so they’ve inspired a week all about soups!

Monday – Orzo soup. You can also use chicken in place of the turkey.

Tuesday – Chicken gnocchi soup. I recommend keeping a close eye on the gnocchi cooking in the crockpot, or just cook it separately. It is easy to overcook.

Wednesday – One pot skinny lasagna soup

Looking to get in the fun of celebrating Oktoberfest? Then try this easy oven baked Pork Schnitzel. It’s healthier than pan frying, but tastes just as delicious. It also is a great make ahead meal and stores well in the freezer.

Pork schnitzel is a popular German dish prepared by breading and frying thin pork cutlets. Although there are many varieties of schnitzel like chicken, veal, and turkey. Pork is one of my personal favorites. The key to a good schnitzel is a meat mallet. You need to pound the pork very thin.  Skip the gym and have this be your arm work out!

Ingredients
  • 4 boneless pork chops, pounded until ¼ inch thick
  • ½ cup flour
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp roasted garlic powder
  • 2 eggs whisked
  • 1 cup unseasoned breadcrumbs
Instructions
  1. Preheat oven to 425.
  2. Combine flour and spices in shallow bowl. Eggs in another, and breadcrumbs in another
  3. Dip each piece of pork into flour, shaking off excess. Then dip into egg, then bread crumbs. Place pork on a lightly oiled wire rack over baking sheet.
  4. Bake for 15 minutes. Flip and bake another 5 minutes.

If your answer is classic, homemade, and comforting chicken noodle soup, this is the recipe for you.  Homemade soup on a cold winter day is the perfect recipe. This will quickly become your favorite, go-to chicken noodle soup recipe that the whole family will enjoy! It stores great in the freezer and is easily reheated over the stove. My favorite type of noodle to use is extra wide egg noodles, but I’ve also used orzo. The mini meatballs are optional, but I highly recommend it!

Ingredients
  • 8 cups chicken broth
  • 2 cups shredded rotisserie chicken
  • Mini meatballs (optional)
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2-3 bay leafs
  • ¼ cup chopped onion
  • ½ bag extra wide egg noodles
Instructions
  1. Add all ingredients to a crock pot, except egg noodles.
  2. Cover and cook on low 6 hours.
  3. Before ready to serve, cook egg noodles according to package directions.
  4. Once crockpot is done, remove bay leafs and turn heat off.
  5. Add cooked egg noodles to crockpot. Stir. Serve.

Creamy Corn and Kale Chowder

The bacon in this corn and kale chowder pairs nicely with the creamy broth and it gives this easy soup recipe a perfect crunch! 

Corn Chowder

This chowder is the perfect year around soup and you’ll pleasantly surprised with how great it tastes made with fresh or frozen corn. I’ve done it both ways when fresh corn wasn’t in season.  The crunchiness and saltiness of the bacon pairs well the creaminess of the broth.  A tip when cutting the corn off the cob-place in a bowl to collect the kernels.

Recipe type: Soup
Serves: 2
Ingredients
  • 3 slices bacon, coarsely chopped
  • 2 tbsp flour
  • 2 cups chicken stock
  • 2 cups fresh corn removed from husk or 2 cups frozen corn
  • 1 cup kale, chopped
  • ½ cup milk
  • Salt and pepper
Instructions
  1. In a medium pot, sauté bacon pieces over medium heat until crispy, remove from pot and set aside.
  2. Stir in 2 tbsp flour, whisk 2 minutes.
  3. Add 2 cups of chicken stock, whisk 2-3 minutes.
  4. Add corn, cook 2 minutes. If using frozen corn, thaw first.
  5. Use immersion blender to blend to desired consistency
  6. Add kale and reduce heat to a simmer for 6-8 minutes
  7. Add milk and salt and pepper to taste
  8. Top with bacon
