Monday – Kale and corn chowder topped with bacon. Because doesn’t bacon make everything better!
Tuesday – Arroz con pollo. What a flavorful one pot meal!
Wednesday – Greek kale salad with grilled chicken. I topped mine with grilled chicken tenders for more protein.
Thursday – Chicken noodle soup. Easiest crockpot recipe.
Friday – Mediterranean chickpea salad over quinoa. Healthy, refreshing, and leftovers taste just as good.
