Monday – Balsamic honey and mustard pork chops. I used blueberry jam instead of blackberry.
Tuesday – Crockpot chicken tortilla soup. Set and forget.
Wednesday – Seared blackened salmon. Hands down the tasty way to cook salmon.
Thursday – Lasagne soup. Cheesy, delicious, and less calories than traditional lasagne.
Friday – Vegetarian cheesy quesadilla with spinach and quinoa. An easy dinner to throw together at the end of the work week. Great for the littles too!
