Monday – Orzo chicken soup. I substituted the turkey in place of the chicken.
Tuesday – Chicken piccata. Sounds like a fancy Italian meal, but I couldn’t believe how easy it was to make!
Wednesday – Crockpot chicken and gnocchi soup. My recommendation would be to keep a close eye on the gnocchi cooking in the crockpot, or just cook it separate on the stove; it is easy to overcook.
Thursday – Slow cooker chili mac and cheese.
Friday – Marinated seared ahi tuna with an Asian cabbage slaw.
