Monday – Pork tenderloin with roasted brussel sprouts and butternut squash. Sear pork tenderloin in cast iron 5-6 minutes total. Make sure to rotate, then bake at 400 degrees until internal tempature reaches 145. Cut brussel sprouts in half, season with olive oil, salt, and pepper and bake in the oven along with the pork for 10 minutes.
Cube butternut squash, season olive oil, salt and pepper and saute on the stove about 15 minutes until turns a deeper orange and softens.
Tuesday – Beef Stroganoff
Wednesday – Linguine with white clam sauce
Thursday – Butternut squash and apple soup
Friday – Chicken parmesan meatloaf
