Monday – Creamy and cheesy pesto pasta with ground chicken meatballs. The orginal recipe called for heavy cream, but I used plain greek yogurt instead. I also made my own meatballs.
Tuesday – Seared salmon with a cilantro lime sauce
Wednesday – Healthy quinoa bowl. I switched the chickpeas for avocado 🥑.
Thursday – Steak tacos with cilantro lime sauce. Used the same cilantro lime sauce from the salmon recipe because it was so good! We used sirloin tip, seasoning with salt and pepper. Grill 5-7 minutes a side (depends how thick it is). Let rest and slice thin.
Friday – Easy Asian beef and noodle soup
