I am definitely one who enjoys leftovers, but how many days in a row can you really eat ham?! So this week I’m making a couple of meals using the leftover ham in different ways.
Monday– Croque-Monsieur panini. Don’t be alarmed! Those fancy words just mean ham and cheese sandwich! I’m using my panini press, but you can also use a George Foreman Grill. If you don’t have either of those, you can use a frying pan and press the sandwich down with a lid (you just won’t get the pretty panini press lines).
Tuesday– Cheeseburgers with sweet potato fries and roasted brussel sprouts. Not only is today the first time we’ve used our grill for the season, but it’s also the first time using the grill at our new house!
Wednesday– Broccoli rabe with penne and spicy Italian sausage. I love making this dish when broccoli rabe is on sale. It’s a nice change to the traditional pasta with tomato sauce. The broccoli rabe can often taste bitter when not seasoned properly. I learned quickly from trial and error that it needs to be cooked in chicken broth for added flavor and to prevent the bitterness. The spicy Italian sausage and added red pepper flakes gives it a little extra kick, which my husband loves! It’s a win all around!
Thursday– Taco Thursday at my favorite new Mexican place, Lucky Taco. Go check it out!
Friday– Kale Caesar salad with grilled chicken. The baked cheese on this salad is amazing! Instead of roasted chicken, I’m using grilled chicken. Yay! Get to use the grill again!
To help use the rest of the ham, I’m also making this ham, onion, and cheese frittata. I’ll make it in the begining of the week and be able to enjoy a healthy quick breakfast before work.
